Appellation

The Chablis vineyard covers some 5,000 hectares, making it the largest of the Burgundy appellations. It is divided among 20 villages and hamlets along the Serein valley, on both sides of the village of Chablis. Chablis wines are divided into 4 appellations: Petit Chablis, Chablis, Chablis Premier Cru and Chablis Grand Cru.
These appellations are differentiated by very precisely-defined production areas and specific production conditions. The authorised yield varies for each appellation. The minimum sugar required to be able to harvest the grapes also depends on the type of cru. Logically, the higher up you go in the hierarchy, the greater the requirements.
