Chablis Premier Cru

Harvested on the slopes exposed to the south and the west, this wine covers specific terroirs described by place name. There are 79 place names for Chablis Premier Cru, grouped together in 40 climats or vineyards. They each have a distinct personality. These 40 Premiers Crus are also grouped together into 17 more well-known names.

The different vineyards each provide an individual character to these white wines, depending on the soil and the exposure; they are structured, with good length on the palate. From the more mineral, aromatically closed when young, to the more floral which develop delicate and subtle aromas, the Premier Cru is a delight for the palate.

The Premier Cru has a real aromatic complexity, lending it to many pairings, such as cooked oysters and fish served with sauce. The most mineral wines can be served with poultry or veal with a white sauce, whilst the most open flavours will enhance andouillette or snails. A Premier Cru will complement Chablis ham, a local speciality.

Premiers Crus need time to age; typically 5 to 10 years.

Serving temperature: 10 to 12 °C.
