The Chablis appellation is known throughout the world and is much admired by connoisseurs.

Located in the French département of Yonne, at an equal distance from Paris and Beaune, the Chablis vineyard is located in the northern part of Burgundy.

The richness of Chablis wines is the result of the combination of a unique soil and a specific climate, a highly-esteemed grape variety and the work and expertise of all those involved. Its mineral overtones and its wonderful freshness have provided it with an unparalleled reputation.

The specific nature of the Chablis and Chablis Premier Cru appellations resides in the limestone soil formed in the Kimmeridgian period (Upper Jurassic era). The soil can be recognized by the presence of small oysters called Exogyra Virgula. The Petit Chablis is situated on soil with limestone from the more recent Portlandian period. The Chablis Grand Cru grows on steep slopes where the Kimmeridgian soil sometimes shows on the surface, thus benefiting from a very specific exposure to the sun and a very rich subsoil.

The only grape variety permitted on the entire Chablis vineyard is Chardonnay. Even though this grape is known throughout the world and has become the international reference in terms of white wine, it is its interpretation through the soil, the climate and the expertise of the Chablis winegrowers that counts.
